Joel already complains long and hard about how long it takes to compile the AI (actually I think he lets Dalai do it now), and if that weren't reason enough not to attempt AI thieves, can you imagine the minimum processor spec you'd need to play SP Thievery?
You could try to SIMULATE a thief though. Set him to move to points on a map the same way a guard patrols. But still...that would only work in special circumstances.
